HI I just got a slash and I want to run lipo. What do I need to do to be able to run it with the stock esc? I'm running in a stock class so I can't go brushless. Do i just need to keep an eye on the volts?

You need to get yourself a LVC (low voltage cutoff) to use lipo w/ the XL5.
Try Tower Hobbies.

What exactly does a Low Voltage cutoff do?

Low voltage cut-off is so you don't run your LiPo batterys below the reccomended voltage. LiPo's from my understanding do NOT like to be ran down below a certian voltage. Bad things happen. This is only from what I've gathered from others. I personally am not in the "LiPo" club yet but I'm getting close ;D.

I use a sensor radio and it has battery pack voltage monitor that can be hooked up. I set the warning to tell me when the battery gets close to its lower limit. It works really good that way without a LVC. Some have had problems with a LVC reacting weird with take off at full throttle.

Createacrawler is correct. You dont want your LiPo's to drop below 3.0v - 3.2v per cell. That means that the LVC will cut off the power once your 7.4v LiPo battery hits 6v.
